History

The name of the Ophio variety comes from Allium sativum var. ophioscorodon – an ancient European and Asian hardneck garlic group known for more than 2000 years. These garlics originated in the Caucasus and ancient Persia, later spreading to the Balkans, Central Europe, and Scandinavia.

Modern Ophio breeding lines retain the ancient group's characteristics — spiral flower stalks, cold resistance, and a distinctly strong flavor. Today, the variety is being revived among small farms and enthusiasts who appreciate its “ancient genetics” and rich aroma.
