Spas is a winter hardneck type garlic variety, distinguished by excellent frost resistance, uniform growth, and consistently large heads. It is one of the most popular varieties in the Eastern European region, especially in Ukraine and Belarus, as well as Moldova, where it has been cultivated for several decades.
Spas forms a firm flower stalk, medium to large heads, and 6–9 large cloves with a characteristic purple-striped skin. The taste is sharp, distinctly aromatic, and persistent, making this variety especially suitable for dishes where an intense garlic note is desired – marinades, roasts, canning, and spicy sauces.
Spas is very productive and also adapts well to cool summers and heavier soils, making it a reliable choice for both home gardens and commercial cultivation.
History
The variety Spas originated in the selection of Ukrainian breeders in the second half of the 20th century, purposefully selecting winter garlic that could withstand harsh winters and fluctuating spring temperatures. The variety also became popular in Belarus and western regions of Russia, as it provided stable yields even in unfavorable weather conditions.
In recent years, Spas has also spread to Central Europe and the Baltic States, where it is valued for its yield, aroma, and resilience.
