Vallelado is one of the most famous Spanish white hardneck garlic varieties, especially known for its very pronounced aroma, strong flavor, and excellent storage ability. The variety forms large, firm heads with 8–12 large, symmetrical cloves covered by a white or slightly silvery skin. Unlike other Spanish varieties, it grows well in Latvian conditions.

Vallelado is hardy, well-suited for hot summers and cool winters, making it especially versatile for various growing conditions. It is highly valued in cuisine because it retains its intense flavor even after heat treatment.

History

Vallelado garlic got its name from the village of Vallelado in Castile and León, one of Spain's traditional garlic growing centers. The variety has been cultivated in this region for more than 200 years, thanks to its drought resistance and excellent flavor. In the 20th century, Vallelado became one of the leading garlic varieties in professional Spanish and Portuguese farm networks, and later spread throughout Europe. Today, it is one of the best-known Spanish white garlic varieties.
